Fresh Air-Chilled Alina Duck
4 lb. avg. We are currently raising a new Duck (at our farm in Cayuga, New York), and it is called Alina Duck. It is a french breed of White Pekin that we found in Roussay France, and it naturally grows very slowly while eating corn that we grow on our own farms. A domestic White Pekin grows to 4 lbs in about 6 weeks, where our Alina Duck grows in our large arena style coops for approximately 8.5 - 9 weeks. These Ducks are air-chilled after processing (at our farm and USDA plant in Sullivan County, New York). This is very important because we are one of the only Duck Farms that take the time, labor, and product loss to air-chill. Traditionally the bird will be chilled in ice water, and the US government allow up to 10% absorbed water in a birds, so you would be getting a bird that was watered down. Our air-chilling,process, and slow growing program ensures that you receive 100% Duck with a rich squab-like flavor, and a skin that crisps perfect every time.
